Redspice Roasted Kumara

 

Ingredients:

750gm kumara, peeled and diced
Two tablespoons of Redspice
Olive oil/coconut oil
Herbs or microgreens to serve

Method:
Toss the kumara in a baking dish together with oil and Redspice. Place in an oven at 180 degrees for around 40 minutes, or until brown and crispy - we find the coconut oil bakes the best with these. Serve with steak or sausages and salad, dressed with the herbs and a good dollop of aioli or mayo.
