Redspice Pumpkin and Bacon Pasta

Redspice Bacon and Pumpkin Pasta



200g pasta
400g pumpkin
4-5 rashers of bacon
1 Tbsp olive oil
1-2 tsp redspice
Pepper for seasoning

To serve: fresh herbs, parmesan, lemon juice and zest


Preheat oven to 200 degrees. Remove skin and seeds from pumpkin, chop into 5cm pieces and place into an ovenproof dish. Slice bacon into pieces and add to the dish. Sprinkle with redspice and pepper and mix well. Cover and cook for 30 minutes, then uncover and cook for another 10 minutes to brown the pumpkin and crisp the bacon.
Boil the pasta in well salted water, drain and when ready, add to the pumpkin and bacon dish.
Season with plenty of fresh parmesan, chopped fresh herbs and some lemon juice and zest.
