Redspice Pulled Pork
Ingredients:
3 tablespoons Redspice
750gm diced free range pork
olive oil/coconut oil for frying
400g diced tomatoes
Method:
Toss the diced pork with Redspice. Heat a frying pan with the oil, then sear the pork in batches, before transferring to a slow cooker - brown it, but don't cook all the way through. Add the tomatoes and any other flavourings you like - we use miso, chipotle sauce, wine, honey and smoked garlic. Cook on low for seven hours, until pork easily comes apart when stirred with a spoon.
To serve:
Option 1: Spoon into bowls with brown rice or quinoa, garden salads, topped tomatoes and a few corn chips.
Option 2: Fill warmed tacos with the pulled pork and top with cheese, sour cream and sauerkraut.
Option 3: Serve over baked potatoes with yoghurt dressing and chipotle sauce.
Option 4: Serve in warm baps with coleslaw and mint leaves.
Option 5: Dish it into wraps with cheese and salads.
